    Vegan Cashew Dressing Recipe

    Ingredients:

    • 1 cup raw cashews
    • 1/2 cup water
    • 1/4 cup freshly squeezed lemon juice
    • 1 tablespoon Dijon mustard
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon sea salt
    • 1/4 teaspoon black pepper
    • 2 tablespoons extra-virgin olive oil

    Instructions:

    1. Place the cashews, water, lemon juice, mustard, garlic powder, salt, and pepper in a high-speed blender and blend until smooth and creamy.

    2. With the blender running, slowly drizzle in the olive oil and blend until combined.

    3. Taste and adjust seasonings as needed.

    4. Store the dressing in an airtight container in the refrigerator for up to 5 days.
